LEMON GINGER POWER BEET JUICE
You will need
2 medium beets, scrubbed, cleaned and tops trimmed and chopped for juicer
1 medium seedless cucumber – washed and chopped
1 knob fresh ginger – washed, peeled, grated
1 lemon – peeled, seeded, cut into slices
Making the Juice
Reserve ½ the lemon. Push everything through the juicer, alternating between the beets and the softer cucumber and lemon. You can use a high-powered blender as well. When everything has been juiced, taste for tartness – add more lemon if you’d like more tartness. Add a small-cored apple if it’s too tart.
